I did pretty well at keeping up with the cooking this week. On Wednesday, with my friend coming over for dinner, I didn’t get the mince out of the freezer early enough so had to buy more for dinner while the large pack defrosted in the fridge. That led to a pretty beef heavy week but challenged me to try different things with it so it didn’t feel so mammoth.

Friday’s dinner I went for Mexican again but this time I used tortillas with spices, sweetcorn and black beans stirred through the beef and topped with crème fraîche and cheese.

Continuing my culinary tour of the world, on Saturday, I decided to try a Korean-style bibimbap (another tesco recipe) which was delicious and used up the last of some basmati rice i had in a jar #winning. Anything with a fried egg on top is always good with me.

Finally Sunday it was the last of the beef (phew) and i went for simple cheese (used up) burgers (used up) with a spinach salad (used up), smoked paprika sweet potato wedges (used up) and a glass of white wine (used up)

I also baked a completely ridiculous unicorn themed cake for my friend’s birthday and used up the butter for the buttercream.

All in all a pretty successful week and I am proud of myself for sticking with the cooking and even throwing some extra baking in the mix. I forgot how much I enjoy it, when I get into the habit and how I love sharing my love of food with people around me.
